When you enter Goldman's Kosher Bakery, you are immediately presented with an array of products, starting from the smallest cookie to the largest torte or pie. Most people think (and it's an easy assumption to make) that we just push a button or open a box and there it is. If you continue on, we'll show you what goes into all of our products. It is like a symphony, and each instrument, also known as equipment, must perform perfectly.

Cookies: A  ll of our cookies are handmade or cut, but we do utilize machinery wherever possible to speed things along. This brings you a superior product at a fair price. Look at our mixers, and we have three of them in the main bakery, small, medium, and large. The large one can handle cookie doughs up to 200 pounds. Even chocolate chips, oatmeal raisin, and other brown sugar cookies have a little machine to help us out. This little guy cranks out 2000 cookies in a half hour. It still maintains the same movement and quality as if you cut the cookie by hand, but it's a whole lot easier!
And here's another one of our signature cookies, the Icebox Cookie. Look at this little guy that my father and I bought at a show 35 years ago. It looks like a giant egg slicer, but it's not. It cuts those ice box cookies perfectly every time. The sad thing is the company that made this tool is no longer around.
Many of the other cookies are made in large batches and bagged out by hand. This is a team effort, and is done several times a week. Chocolate Tops are always fresh daily, and people call us from far and wide to have these shipped. The furthest we have ever shipped to was Australia for some transplanted Baltimoreans!
Hamentaschen, and other pastries: Hamentaschen... they're not just for Purim anymore. Made year round in  assorted flavors, they all start out here as a big pile of cookie dough. We then take little pieces and run them through this little rolling pin. This little rolling pin is 12 feet long, but it rolls the dough perfectly to a proper thickness. Then the various fillings are added. In the average purim season, Goldman's Bakery will produce in excess of 5000 dozen Hamentaschen to meet orders from Synagogues, organizations, and retail orders!
Danishes are also made on this machine, as well as our signature Coffee Cake. Our Danish Coffee Cake, with our secret almond filling, is twisted like a challah. WARNING... we have been told by many of our customers that this coffee cake is addictive!
 Pies and Crumb Cakes: We make everything in our store from scratch, and that includes all of our tart shells, pie shells, crumb cake bottoms, etc. Look at this little machine. The little piece of dough is placed in the pan and presto... a fully formed pie shell, a peach cake bottom, or a tart.
Ch allahs and Rolls: All of our challahs utilize many of the above machines, but they must be twisted by hand. Three, four, and six twist are just a few of the variations that we make. Teamwork gets the job done. Rolls are made using this heavyweight machine (1000 pounds). Put in a big press of dough, six to ten pounds, and watch it perfectly divide it into 36 even pieces. It can just cut them or round them. From there they either go into the sheeter for forming, or this machine which produces kaiser rolls. It can make thousands per hour and even mini ones. And for big breads. it will round a white bread or rye bread into perfectly round balls, and get it ready for forming by hand, or on the sheeter.
Here's our proof box. Just think of it as a large sauna. The humidity and temperature is set high and the yeast products start to grow.
  Ovens play a big role in maintaining the consistency and quality of our products. We have three ovens in the main bakery, and they all operate daily. The reel oven is the oldest, but it does a great job. The rack oven is the newest, and it is instrumental in producing crusty breads and rolls (European style). The convection oven is used for that odd item that requires special handling, either a lower or higher temperature.
Our washer area is your assurance of the highest standards of sanitation. All of our pans and utensils pass through this after every use, and are sanitized at temperatures exceeding 180 degrees. This machine is running all the time, and we don't know how any bakery can live without one.
On the left, there's another fun machine. Although our fruittorte cake is still made and arranged by hand, this machine sprays a shiny appetizing glaze on top of the cake. These cakes have become so popular, that many of our customers are now using them for birthdays, or other special occasions over traditional cakes. We even put pictures on them with our computer photo system, which is explained in our cake section.
